Ingredients
Instructions
- Lightly oil a large mug (300–350 ml / 1¼–1½ cups) and set aside.
- Mash the banana with a fork in a bowl until smooth.
- Add the egg to the mashed banana and whisk with a fork until combined.
- Stir in the oats, cinnamon, baking powder and a pinch of salt; add the honey if you want it sweeter.
- Add the milk a little at a time until you have a thick, smooth batter (not too runny).
- Pour the batter into the greased mug, sprinkle shredded coconut if using, and microwave on high for 90–120 seconds.
- Carefully remove (the mug will be hot), let rest 1 minute, then unmold or serve straight from the mug.
Tips
- Use a very ripe banana (sweeter) to avoid adding much honey.
- Adjust microwave time for your appliance: start with 90 seconds and add 10–15 seconds if needed.
- For a firmer texture, replace 1 tablespoon of oats with oat flour.
Variations
- No-honey version: use 1 large banana and omit the honey.
- With a topping: add plain yogurt and banana slices on top after it cools.
- Baked in the oven: place in a small greased ramekin and bake at 180 °C (350 °F) for 12–15 minutes.
