Ingredients

Instructions

  1. Bring 500 ml (about 2 cups) water to a boil; add the noodles and cook for the package time minus 30 seconds so they stay slightly al dente. Reserve 50 ml (about 3 tbsp) of the cooking water, then drain the rest.
  2. While the noodles cook, heat the oil and butter in a medium skillet; sauté the chopped onion and minced garlic until translucent.
  3. Add the grated carrot to the pan and sauté 1–2 minutes, until tender but still a bit crisp.
  4. Add the drained noodles to the skillet, toss to combine with the carrot, and season with soy sauce (if using) and a pinch of salt and pepper.
  5. Quickly beat the eggs with a fork in a small bowl; pour over the noodles and stir continuously until the egg sets, creating a creamy texture. If needed, add the reserved cooking water a little at a time to loosen and make it creamier.
  6. Sprinkle the grated Parmesan, adjust salt and pepper, turn off the heat, finish with chopped scallion, and serve immediately.

Tips

  • Grate the carrot coarsely to keep texture; finely grated carrot cooks faster and blends into the dish.
  • For an extra creamy egg, remove the pan from heat while the egg is still slightly wet—the residual heat will finish cooking it.
  • Use the reserved cooking water to adjust creaminess without diluting flavor.

Variations

  • Add crispy bacon pieces at the start of the sauté for a more indulgent version (dice and fry before adding the onion).
  • Stir in 1 tablespoon cream cheese at the end for an even creamier, richer ramen (you can use Brazilian requeijão if available).

FAQ

Can I use only egg whites?

Yes, but the result will be less creamy and drier; compensate by adding a little more of the reserved cooking water or a spoonful of cream cheese.

Should I use the seasoning packet from the ramen?

You can use part of the seasoning, but reduce the amount to avoid excess salt—it's better to balance flavor with soy sauce and cheese.

Can I make this in the microwave?

Yes: cook the noodles in microwave-safe bowl with water, drain, then mix with beaten egg and heat in short bursts, stirring frequently until the egg is set.
