Ingredients
Instructions
- Slice the strawberries and place in a bowl; add 1 tablespoon honey and the lemon juice, toss and let macerate for 5 minutes.
- Spoon 2 tablespoons of yogurt into the bottom of four glasses or small jars.
- Add a thin layer of granola over the yogurt (about 2 tablespoons per glass).
- Add a layer of macerated strawberries and, if using, some banana slices.
- Repeat the layers (yogurt, granola, fruit) until the glass is filled; finish with strawberries, 1 tablespoon honey and sprinkle chia and cinnamon to taste.
- Serve immediately to keep the granola crunchy, or refrigerate without the granola and add it just before serving.
Tips
- If preparing to take on the go, keep the yogurt and fruit refrigerated and pack the granola separately to preserve crunch.
- Use thawed frozen strawberries for convenience — drain any excess liquid before assembling.
- Adjust sweetness by adding more or less honey; Greek yogurt makes the parfait richer and creamier.
Variations
- Swap the strawberries for mixed berries (raspberries, blueberries) or sliced peaches.
- Use Greek yogurt for a thicker, higher-protein texture.
- Add chopped nuts or cacao nibs for extra crunch and flavor.
FAQ
How long can I store the parfait in the fridge?
A parfait assembled with granola will soften; eat within 6 hours. If storing longer, keep the granola separate and assemble at serving time (yogurt and fruit can be refrigerated up to 24 hours).
Can I substitute the honey with another sweetener?
Yes. Use maple syrup, molasses, or your preferred liquid sweetener in the same amount.
What is the best granola for this parfait?
Choose a crunchy granola with oats and nuts for contrast with the creamy yogurt and tender fruit.
